Okay, this is the dish that I got the most requests for. Bear with me as I figure out out what the hell I’m doing… eventually there may be a ‘recipes’ section or some such. Right now I can’t even figure out how NOT to make those damn links look like… you know… LINKS. smh
Anyway, I cannot tell you how easy this dish is. First things first: I DON’T MEASURE ANYTHING. Maybe it’s because I’m from a big family or actually know how to cook… I don’t know. So I’ll give you the ingredients and you can figure it out.
Basmati Rice (washed and drained)
Grapeseed Oil
Organic Arugula (washed)
Organic Spinach (washed)
Spices: Curry Powder (yellow), coarse sea salt (cracked), peppercorns (cracked)
DIRECTIONS: Heat a little oil in a pan. Add rice and stir on high heat until tough/tender (like you’re making pilaf). Add curry powder, salt and pepper to taste.
Note: I like to crack my sea salt and use it because I use less that way, and there’s honestly nothing better than the taste of freshly cracked pepper (not that crap you buy in a bottle).
When rice is done (taste test!) add arugula and spinach. Stir until ‘just’ cooked (bright green) and serve immediately.
