Recipe: Creamy Chickpea Curry

I have to be honest… I never thought anyone would want the recipes for the things that regularly make their way into my body. I’m the laziest cook on EARTH. My only rule is that things have to taste good and can’t be ugly. But I’m not slaving away for 4 hours in the kitchen to impress… who?

Anyway, Instagram was all ‘SHARE THE RECIPE!’ so here it is:


-1 head of cauliflower

-1/4 cup cashew milk

-Garbanzo beans (I soaked mine for 2 days and then boiled them for 2 hours in seasoned water)

-1 sweet onion

-sea salt, cracked pepper, cayenne, curry powder, fresh ginger (smashed), fresh garlic (smashed)

Sautee Onions until nearly transparent, then add garbanzo beans and spices to taste. Cover the bottom of the pan with 2 tbsp of water, turn to low heat and cover.

Cut up cauliflower and steam on high heat until done, then add to vitamix and blend with cashew milk until smooth.

Add cauliflower ‘cream’ to beans, mix and simmer for 10 minutes or until all the flavors merge.
