Breakfast Options

If breakfast (real breakfast… not a cup of coffee and a slice of toast) is your jam, here are some of my favorite options! I tend to eat them post workout (I work out very early in the morning), and find that these dishes replenish my body and give me enough fuel to really take on the day.

BANANA OATMEAL:

2 bananasbananas

3 cups of cashew milk (see here for recipe)

Oats

Sea Salt

Put bananas and milk in a blender and blend until smooth. Pour into a saucepan and warm over low heat until hot to touch. Sprinkle sea salt to taste, then add oats to desired thickness. Cook to desired firmness, remove from heat, and eat.

*You can make the same dish with 6-10 dates instead of bananas

 

TOFU SCRAMBLE

4 inch cube of extra firm tofu (drained and pressed to dry)

Green Onion

1/4 red bell pepper

1 cup yellow baby tomatoes

1/4 cup fresh chopped cilantro

1/3 avocado

sea salt

garlic

cracked pepper

vegan cheese (optional)

Dice vegetables. Smash tofu until it resembles ‘scrambled eggs.’ Heat non-stick pan over high heat, saute onions and bell pepper, then add tofu and spices (to taste). stir until tofu is fully heated, then add vegan cheese. Stir  until melted, plate, and sprinkle tomatoes and cilantro on top. Garnish with avocado on the side.

 

AVOCADO BAGEL

1 plain bagel

1 whole avocadoavocado.jpg

1 tomato (sliced)

alfalfa sprouts

red onion (sliced into rings)

1/2 lemon

salt

garlic

cayenne

Toast bagel. Smash avocado into paste, and season with salt, lemon, cayenne and garlic to taste. spread onto bagel halves.  Add sliced tomatoes to one side, onions to the other.  Then sandwich alfalfa sprouts in the center. Enjoy.

 

WILD RICE SCRAMBLE

1 cup of cooked basmati rice

Beyond Meat crumbles

1 leek (diced)

sugar plum tomatoes (diced)

green bell pepper (diced)

1 jalepeno (diced)

vegan cheese (optional)

saute vegetables in a non-stick pan over medium heat. Add meat crumbles and warm through. Add rice and toss together until fully heated. Add cheese and toss until melted. Plate, garnish with diced tomatoes and serve.

    Great Ideas ! I have been struggling with Breafast ideas beyond oatmeal and I don’t care for smoothies to much during the winter.

    1. I know the feeling! There has to be life beyond smoothies.😂 I actually made the rice dish this morning. I was in the mood for something savory…
